Recognize fermented food and beverage products in our daily lives and use the underlying scientific knowledge of these products as a guide for their optimal production and/or
consumption.
Individually or as a member of a team, you visit a local supermarket, and conduct a survey of the products there whose production involved fermentation.
The survey will include
The names of the products (General types like cheese etc)
The varieties of the product present
Their approximate abundance
Storage conditions
Whether they were produced by bacterial or fungal fermentation
Note whether they contain live microbes. If live microbes are contained, record the species name(s) of the microbes included from the product label.
Your survey need only contain the primary fermentation products, not their derivates (e.g. record types of cheese, but not “macaroni and cheese” or “Cheetos”).
After completing your survey, prepare a well formatted report or detailed chart with your data presented in tables and graphs.
You will be evaluated on the following criteria:
Clarity of data (layout, presentation style, legends) [35%]
Completeness of data presented [25%]
Accuracy of data [20%]
Aesthetic quality [10%]
Citations[10%]
