This assignment is in two parts.
Purpose
The purpose of the assignment is to draw together all areas of study and research in this unit and use it to analyse and evaluate a food and beverage establishment and make recommendations for improvement.
Identify a food and beverage establishment for which you could be a mystery guest. You will need to give this careful consideration as the restaurant must meet the criteria below for you to be able to address all aspects of the assessment criteria:
• A wine list – it does not need to be an extensive list but an important part of your review is to analyse and critique a wine list so a minimum of twelve wines are required.
• A printed menu – a blackboard menu is not suitable as you are required to evaluate the menu design and layout.
• Table service – self-service restaurants are not appropriate as an important part of your review is to evaluate the service.
• A website.
• Research and write a short description of the establishment. Your description should Include: name and address, contact details, trading hours, size (number of seats), owner & chef, restaurant style, special features, history such as how long it has been there, how long have the current owners had it and what does the restaurant aim to achieve? (250 Words).
• Develop a detailed checklist to be used to evaluate all aspects of a dining experience at the establishment. Include a % weighting for each area of evaluation (There is no set word count for this part of the assessment).
• Justify the areas of evaluation included in your checklist with reference to the literature (500 words).
A minimum of 4 Academic references is required for this assignment.
Part B – Individual Report – Write a review 1700
Task
• Visit the establishment and use the checklist developed in Part A to evaluate the dining experience. Your checklist needs to be completed on that occasion in your own handwriting and included in the appendix.
• In your report analyse and evaluate all aspects of the dining experience.
• Make recommendations for improvement and if no improvements are required explain why.
• You must use a variety of academic and industry sources to support your arguments. A minimum of 8 academic references and other sources are required.
