NMDF121 – Foundations of Human Nutrition
This assignment looks at critically evaluate how food preparation and farming methods effect the nutritional value of foods. As this is a comparison and contrast the four I chosen is Convention Farming, Organic Farming, Peeling and Blanching.

Organic farmingand Conventional farming are two main forms of farming that have very different principals. With over 100 years under it’s belt (Diekmann, 2013, pp 197), Organic farming goes without the use of synthetic fertilizers and pesticides on crops grown from seeds that are true to form and not genetically modified (Duram, 2005, pp 2-3). Convention farmers became popular in the 1960’s (Sustainable Table, 2014) with the ability to produce different produce and a higher yield by the use genetically modified seeds grown in fossil fuel derivative fertilisers. (Duram, 2005, pp8).
In able to get the best quality produce, organic farmers utilise crop rotation to ensure healthy soil and introduce beneficial insects to assist with naturally killing insects that cause harm to the crops(Sustainable Table, 2014).Unfortunately with the higher level of requirements and superior level of nutritional value (Duram, 2005 pp 5),organic produce comes a higher cost to consumers (Sustainable Table, 2014).
Taking into consideration the lower level of toxicity from pesticides (Duram, 2005, pp 19), the positive nutritional value, conservation of environmental factors such soil, water as well as assisting in aid biodiversity more than conventional farming (Gabriel et al, 2013 pp 362), it is clear that organic farming is the most effective for the consumer as well as the earth.
Nutrition in the 21st Century
With rapid population growth, nutrition was mainly focused of growth of crops to support the human race, preventing infections and disability. (Dangour et al, 2006 pp s6) however chronic health issues such as obesity, cancer and dibetes require that the food supply be safe and health to aid with reducing these diseases as well as support the demand, keep in line with convenience and be affordable.
